Cook the Pasta

In a large pot, bring water to a boil. Add a pinch of salt and the pasta. Cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Bell Pepper and Carrot

Add the sliced bell pepper and julienned carrot to the skillet. Cook for 3-4 minutes, stirring occasionally, until they begin to soften.

Add Zucchini and Cherry Tomatoes

Stir in the sliced zucchini and halved cherry tomatoes. Cook for an additional 3-4 minutes, until all vegetables are tender.

Combine Pasta and Vegetables

Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine.

Season the Dish

Sprinkle the grated Parmesan cheese over the pasta and vegetables. Season with salt and black pepper to taste. Toss everything together until well mixed.

Garnish and Serve
