1. Prepare Quinoa
In a medium saucepan, combine quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes.
2. Make the Burger Mixture
In a large bowl, mash black beans with a fork. Add cooked quinoa, bell pepper, carrot, green onion, garlic, ground flaxseed, breadcrumbs, cumin, paprika, salt, and pepper. Mix until well combined.
3. Form Patties
Divide the mixture into 4 equal portions and form into burger patties.
4. Cook the Patties
Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until browned and heated through.
5. Grill the Mushrooms and Caramelize Onions
In the same skillet, add sliced mushrooms and cook until browned, about 5-7 minutes. Remove mushrooms and set aside. In the same skillet, add sliced onion and cook over low heat, stirring occasionally until caramelized, about 10-15 minutes.
6. Assemble the Burger
On each whole wheat bun, place a quinoa burger patty, top with grilled mushrooms, caramelized onions, a slice of tomato, and avocado slices.
7. Serve
Serve immediately and enjoy your Veggie Quinoa Burger!
