Cooking Instructions
- 1
Prepare the Asparagus
Trim the tough ends off the asparagus. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the asparagus, season with salt and pepper, and sauté for about 5-7 minutes until tender but still crisp. Remove from heat and set aside.
- 2
Cook the Steak
Season the prime New York striploin with salt and black pepper on both sides. In a skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steak from the skillet and let it rest for a few minutes.

Make the Green Peppercorn Sauce
In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the green peppercorns and beef broth, scraping the bottom of the skillet to release any browned bits. Let it simmer for about 3-4 minutes. Add the heavy cream and stir continuously until the sauce thickens, about 2-3 minutes. Season with salt and pepper to taste.
