Lamb Loin and Apple Chutney Glaze

Method

Cooking Instructions

  1. 1

    Prepare the Lamb Loin

Preheat your oven to 200°C (400°F). Rub the lamb loin with olive oil, salt, and black pepper. Place it in a roasting pan.

  2. 2

    Roast the Lamb

Roast the lamb for about 25-30 minutes, or until it reaches your desired level of doneness. Use a meat thermometer for accuracy; aim for 60°C (140°F) for medium rare.

  3. 3

    Glaze with Apple Chutney

In the last 10 minutes of roasting, brush the apple chutney over the lamb loin to glaze it.

  4. 4

    Prepare the Broccolini

While the lamb is roasting, bring a pot of water to a boil. Add the broccolini and cook for 2-3 minutes until bright green and tender-crisp. Drain and toss with lemon juice.

  5. 5

    Rest the Lamb

Once the lamb is done, remove it from the oven and let it rest for 10 minutes before slicing.

  6. 6

    Serve

Slice the lamb loin and serve it with the glazed apple chutney and the lemony broccolini.
