Roast the Lamb
Roast the lamb for about 25-30 minutes, or until it reaches your desired level of doneness. Use a meat thermometer for accuracy; aim for 60°C (140°F) for medium rare.

Glaze with Apple Chutney
In the last 10 minutes of roasting, brush the apple chutney over the lamb loin to glaze it.

Prepare the Broccolini
While the lamb is roasting, bring a pot of water to a boil. Add the broccolini and cook for 2-3 minutes until bright green and tender-crisp. Drain and toss with lemon juice.

Rest the Lamb
Once the lamb is done, remove it from the oven and let it rest for 10 minutes before slicing.

Serve
Slice the lamb loin and serve it with the glazed apple chutney and the lemony broccolini.
