Prepare the Pesto

In a small bowl, mix the arugula pesto with a little olive oil if needed to make it spreadable.

Assemble the Sandwich

Spread butter on one side of each slice of sourdough bread. On the non-buttered side, spread a generous amount of arugula pesto. Layer Havarti cheese and tomato slices on two pieces of bread, then top with the remaining slices, buttered side up.

Cook the Sandwich

Heat a skillet over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.

Prepare the Fries

Preheat the oven according to the frozen fries package instructions. In a bowl, toss the frozen French fries with olive oil, fresh rosemary, garlic powder, and salt.

Bake the Fries

Spread the seasoned fries on a baking sheet in a single layer. Bake according to package instructions, usually about 20-25 minutes, or until crispy and golden brown.
