Prepare the Crostini
Preheat your oven to 400°F (200°C). Slice the sourdough loaf into 1/2 inch thick slices. Arrange the slices on a baking sheet and drizzle with olive oil. Bake for 10-12 minutes or until golden and crispy.

Make the Topping
Chop the fresh tomatoes and Kalamata olives. In a mixing bowl, combine the tomatoes, olives, fresh basil (chopped), dried oregano, and basil oil. Mix well and season with salt and pepper to taste.

Assemble the Bruschetta
Once the crostini are done, remove them from the oven and let them cool slightly. Top each slice with the tomato and olive mixture. Drizzle with balsamic glaze and sprinkle with Pecorino cheese.

Serve immediately while the crostini are still warm and enjoy your Greek Bruschetta!
