    Prepare the Garlic

    Preheat your oven to 375°F (190°C). Wrap the garlic cloves in aluminum foil and roast them in the oven for 30-35 minutes, or until soft and fragrant.

    Cook the Potatoes

    While the garlic is roasting, peel and chop the Yukon gold potatoes into even-sized chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Squeeze the roasted garlic cloves out of their skins and add them to the potatoes. Add the butter, heavy cream, and Parmesan Reggiano cheese.

    Mix in Chives

    Chop the chives finely and fold them into the potato mixture. Season with salt and black pepper to taste.

    Serve

    Transfer the garlic chive mash to a serving bowl and garnish with additional chives if desired. Serve warm.
