Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves.

Seasoning
In a large bowl, toss the Brussels sprouts with olive oil, salt, and black pepper until they are evenly coated.

Roasting
Spread the Brussels sprouts out on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.

Add Cheese and Bacon
Remove the Brussels sprouts from the oven and sprinkle the crumbled bacon and smoked cheddar cheese on top. Return to the oven for an additional 5 minutes, or until the cheese is melted.

Serve
Remove from the oven, let cool slightly, and serve warm as a delicious side dish.
