Prepare the Tofu
Press the firm tofu to remove excess moisture, then cut it into small cubes.

Chop the Vegetables
Julienne the carrots, slice the bell peppers, chop the green onions, and slice the mushrooms.
Cooking

Sauté the Tofu
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the tofu cubes and sauté until golden brown on all sides, about 8-10 minutes. Remove and set aside.

Cook the Vegetables
Add the sliced mushrooms, bell peppers, carrots, corn, bean sprouts, and edamame to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.

Combine Ingredients
Add the cooked rice, sautéed tofu, soy sauce, salt, and pepper to the skillet. Mix well and cook for an additional 2-3 minutes until everything is heated through.

Serve the tofu pepper rice hot, garnished with the chopped green onions on top.
