Dumpling Wrappers

Prepare the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add boiling water, stirring with chopsticks or a fork until the dough comes together.

Knead the Dough
Transfer the dough to a floured surface. Knead for about 5-10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Roll Out the Wrappers
After resting, divide the dough into small pieces and roll each piece into thin circles, about 3 inches in diameter.

Mix the Filling
In a large bowl, combine ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.
Assemble the Gyoza

Fill the Wrappers
Take one dumpling wrapper and place about 1 tablespoon of the pork filling in the center. Moisten the edges with water, fold the wrapper in half, and pinch to seal. Create pleats along the sealed edge for decoration.

Repeat the filling and sealing process until all wrappers and filling are used.
Cooking the Gyoza

Fry the Gyoza
Heat a large skillet over medium heat and add a tablespoon of oil. Place the gyoza in the skillet, flat side down. Fry for about 2-3 minutes until the bottom is golden brown.

Steam the Gyoza
Add 1/4 cup of water to the skillet and cover immediately. Let steam for about 5 minutes, or until the water has evaporated and gyoza are cooked through.

Crisp the Gyoza
Remove the lid and cook for an additional minute until the bottoms are crispy again.

Prepare the Dipping Sauce
In a small bowl, mix together soy sauce, rice vinegar, chili oil, and sesame seeds. Serve alongside the gyoza.
