Mixing the Batter
In a bowl, whisk together 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, and 1 tsp of salt. Gradually add 1 cup of cold sparkling water until you achieve a smooth batter.

Dip each piece of fish fillet into the batter, ensuring it is fully coated.

In a deep fryer or large pot, heat 4 cups of vegetable oil to 350°F (175°C).

Frying the Fish
Carefully place the battered fish fillets in the hot oil, frying in batches for about 4-5 minutes until golden brown and crispy. Remove and drain on paper towels.
Final Frying of Fries

Frying the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the pre-fried potatoes in batches for about 2-3 minutes until golden and crispy. Remove and drain on paper towels. Sprinkle with salt.

Serve the hot fish and chips together on a plate. Optionally, add a side of tartar sauce and lemon wedges for garnish.
