Cook Udon Noodles
Bring a pot of water to a boil. Add udon noodles and cook according to package instructions (usually about 5-7 minutes). Once cooked, drain and set aside.

In a bowl, combine sliced beef with soy sauce and sesame oil. Let it marinate for about 10 minutes while you prepare the sauce.

Add Curry Powder
Stir in the curry powder and cook for an additional minute, allowing the spices to toast slightly.

Combine Liquids
Pour in the coconut milk and vegetable broth, stirring well to combine. Bring the mixture to a simmer.

Add the marinated beef to the pan and cook until the beef is browned and cooked through (approximately 5-7 minutes).

Combine Noodles and Sauce
Add the cooked udon noodles to the curry sauce, tossing to coat the noodles evenly with the sauce.

Distribute the curry beef udon into bowls. Top each serving with sliced green onions and sweet corn. Serve hot.
