Prepare the Fries
- 1
Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.
- 2
Soak the Fries

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Prepare the Cheese Topping
- 5
Melt the Cheese
In a saucepan over low heat, combine the cheddar and Monterey Jack cheese. Stir continuously until melted and smooth.
Prepare the Chili Mayo
- 6
Mix the Ingredients
In a small bowl, combine the mayonnaise, chili powder, garlic powder, lime juice, and salt. Mix well until smooth.
Assemble the Cheese Fries
- 7
Combine and Serve
On a sizzling hot plate, layer the crispy fries, pour the melted cheese over the top, and drizzle with chili mayo. Serve immediately.
