Combine Ingredients
In a large pot, combine 4 cups of water with the lemongrass stalks (cut into 2-inch pieces), galangal root (sliced), kaffir lime leaves, and bird's eye chilies.

Boil the Broth
Bring the mixture to a boil over medium-high heat. Once boiling, reduce to a simmer and let it cook for about 10 minutes to allow the flavors to infuse.

Add Fish Sauce and Lime Juice
After 10 minutes, stir in the fish sauce and lime juice. Taste the broth and adjust seasoning if necessary.

Finish with Herbs
Stir in the chopped cilantro and green onions just before serving. Allow them to simmer for 1 minute to release their flavors.

Ladle the soup into bowls and serve hot, garnished with additional cilantro or lime wedges if desired.
