Prepare the Noodles

Soak the rice noodles in hot water for about 20 minutes or until they are soft. Drain and set aside.

Make the Sauce

In a bowl, combine fish sauce, tamarind paste, brown sugar, soy sauce, and lime juice. Mix well and set aside.

Cook Chicken and Shrimp

In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken and cook until it is no longer pink, about 5 minutes. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes.

Scramble the Eggs

Push the chicken and shrimp to one side of the skillet. Crack the eggs into the other side and scramble them until fully cooked.

Combine Ingredients

Add the soaked noodles, sauce, green onions, and bean sprouts to the skillet. Toss everything together and cook for an additional 2-3 minutes until everything is heated through.

Serve

Remove from heat, plate the Pad Thai, and garnish with chopped peanuts. Serve hot with lime wedges on the side.
