Preparation of Ingredients

    Prepare the Lemongrass and Galangal

    Trim and smash the lemongrass stalks to release their flavor. Peel and slice the galangal into thin pieces.

    Prepare the Protein

    If using chicken, slice it into thin strips. If using tofu, cut it into cubes.

    Prepare the Mushrooms

    Rinse the straw mushrooms under cold water and set aside.

    Chop the Cilantro

    Rinse the cilantro, remove the stems, and chop the leaves roughly.

Cooking the Soup

    Start the Broth

    In a large pot, bring the chicken or vegetable broth to a boil over medium-high heat.

    Add Aromatics

    Once boiling, add the smashed lemongrass, sliced galangal, kaffir lime leaves, and bird's eye chilies to the broth.

    Add Protein and Mushrooms

    After about 5 minutes, add your choice of protein (chicken or tofu) and the straw mushrooms to the pot. Let it cook for an additional 5-7 minutes until the protein is cooked through.

    Season the Soup

    Add fish sauce, lime juice, and sugar to the pot. Stir well to combine and let it simmer for another 2-3 minutes.

    Taste and Adjust

    Taste the soup and adjust the seasoning if necessary, adding more fish sauce, lime juice, or sugar as per your preference.

Serving the Soup

    Ladle the soup into bowls, sprinkle with chopped cilantro, and drizzle with chili oil if desired. Serve hot.
