Method

Preparation

  1. 1

    Rinse the rice

Place the glutinous rice in a large bowl and rinse it under cold water until the water runs clear. This helps to remove excess starch.

  2. 2

    Soak the rice

After rinsing, soak the rice in enough water to cover it for at least 4 hours, or ideally overnight. This will help the rice to cook evenly.

Cooking

  1. 3

    Drain and cook

Once soaked, drain the rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam over boiling water for about 20-30 minutes, or until the rice is tender and sticky.

  2. 4

    Prepare the coconut sauce

In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar dissolves, but do not bring to a boil.

  3. 5

    Combine rice and sauce

Once the rice is cooked, transfer it to a large bowl and pour half of the coconut sauce over it. Gently mix to combine and let it sit for about 10 minutes to absorb the flavors.

Serving

  1. 6

    Plate the sticky rice

Using a spoon, scoop the sticky rice onto serving plates.

  2. 7

    Garnish and serve

Drizzle the remaining coconut sauce over the rice, sprinkle with sesame seeds, and serve with sliced mango on the side.
