Prepare the Noodles

Cook the Rice Noodles
Bring a pot of water to a boil. Add the rice noodles and cook according to the package instructions, usually about 5-7 minutes, until tender. Drain and rinse under cold water to stop the cooking process, then set aside.

Choose your protein option: For chicken, grill or sauté the chicken breast until cooked through, about 6-8 minutes per side. For beef, slice thinly and stir-fry in a hot pan for about 2-3 minutes until browned. For tofu, press to remove excess moisture, slice, and pan-fry until golden on both sides, about 4-5 minutes.

Prepare the Rice Paper Wrappers
Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10 seconds until it softens. Lay it flat on a clean surface.

Assemble the Wrap
Place a small amount of cooked rice noodles, your choice of protein, and a handful of fresh vegetables and herbs onto the lower third of the rice paper. Fold the sides over the filling and roll tightly from the bottom up to form a wrap.

Make the Broth
In a pot, combine chicken or vegetable broth, fish sauce, lime juice, sugar, ginger, and minced garlic. Bring to a simmer over medium heat and let it cook for about 10 minutes to meld the flavors. Strain the broth before serving.
