Broth Preparation

Prepare the Broth
In a large pot, add the beef or chicken bones and cover with 3 liters of water. Bring to a boil over high heat.

Skim the Scum
Once boiling, reduce the heat to medium and skim off any foam that forms on the surface.

Simmer the Broth
Reduce the heat to low, cover, and let the broth simmer for at least 1.5 to 2 hours. Add fish sauce, salt, and sugar to taste.
Noodles and Assembly

Prepare Rice Noodles
In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.

Prepare Protein
If using chicken or beef, thinly slice the cooked protein. If using tofu, cut into cubes and pan-fry until golden brown.

Assemble the Pho
In serving bowls, add a portion of cooked rice noodles, followed by the sliced protein. Ladle the hot broth over the noodles and protein.

Add Toppings
Top the soup with thinly sliced onions, fresh cilantro, and a handful of bean sprouts. Serve with lime wedges and sliced jalapeños on the side.
