For the Chicken Broth

Prepare the Broth
In a large pot, combine the chicken carcass or bones and water. Bring to a boil over medium heat.

Add Aromatics
Add the onion, garlic, ginger, fish sauce, salt, black peppercorns, cilantro stems, and lime leaves to the pot.

Simmer the Broth
Reduce the heat to low and let the broth simmer for at least 1.5 hours, skimming off any foam that appears on the surface.

Strain the Broth
After simmering, strain the broth through a fine mesh sieve to remove the solids. Return the clear broth to the pot.

Prepare the Chicken
Season the chicken breasts with salt and pepper.

Cook the Chicken
Add the seasoned chicken breasts to the broth and cook for about 15-20 minutes, or until fully cooked.

Slice the Chicken
Remove the chicken from the broth, allow it to cool slightly, and then slice it thinly.
For the Rice Noodles

Make the Noodle Dough
In a bowl, combine rice flour, tapioca starch, water, and salt. Mix until a smooth batter forms.

Steam the Noodles
Pour the batter into a lightly greased flat dish and steam for about 10-15 minutes until set.

Cut the Noodles
Once cooled, remove from the dish and cut into strips to form noodles.
To Assemble the Soup

Combine Ingredients
In a bowl, add a portion of the rice noodles, followed by slices of the cooked chicken.

Ladle the Broth
Ladle the aromatic chicken broth over the noodles and chicken.

Top with fresh cilantro, lime wedges, and chili flakes before serving.
