Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a medium microwave-safe bowl, combine the unsalted butter and semisweet chocolate chips. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  3. 3

    Mix in Sugar and Eggs

Add the granulated sugar to the chocolate mixture and stir well. Then, add the eggs and egg yolks, one at a time, mixing thoroughly after each addition.

  4. 4

    Add Dry Ingredients

Sift in the flour and add a pinch of salt. Gently fold the mixture until just combined, taking care not to overmix.

  5. 5

    Add Vanilla Extract

Stir in the vanilla extract until evenly distributed in the batter.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake the Cakes

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft and jiggly.

  3. 8

    Cool Slightly

Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen.

  4. 9

    Serve

Invert the ramekins onto individual plates and gently tap to release the cakes. Dust with powdered sugar and serve warm with vanilla ice cream and fresh berries if desired.
