Focaccia Preparation

Activate the Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine all-purpose flour, salt, and za'atar spice blend. Pour in the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Focaccia
After the dough has risen, punch it down and transfer it to a greased baking sheet. Gently stretch it into a rectangle about 1 inch thick.

Second Rise
Cover the shaped dough with a damp cloth and let it rise for another 30 minutes.

Prepare the Topping
Preheat the oven to 425°F (220°C). Use your fingers to create dimples in the dough, then drizzle with olive oil and sprinkle with additional za'atar.

Bake in the preheated oven for 20-25 minutes, or until golden brown.
