Cheesecake Preparation

    Prepare the Cheesecake Mixture

    In a mixing bowl, beat the cream cheese and goat cheese until smooth. Add the sugar, vanilla extract, and lemon juice, mixing until well combined. Add the eggs one at a time, mixing until just incorporated. Finally, stir in the sour cream until smooth.

    Bake the Cheesecake

    Preheat your oven to 325°F (160°C). Pour the cheesecake mixture into a greased springform pan. Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Cool and Chill

    Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.

Granola Preparation

    Prepare the Granola

    Preheat your oven to 350°F (175°C). In a large bowl, combine rolled oats, nuts, and salt. In a small saucepan, melt coconut oil and honey or maple syrup together. Pour the mixture over the oat mixture and stir until well coated.

    Add Kumquats and Bake

    Fold in sliced kumquats and sumac. Spread the granola mixture onto a parchment-lined baking sheet. Bake for 20-25 minutes, stirring halfway through, until golden brown.

    Cool and Store

    Remove from the oven and let the granola cool completely before storing it in an airtight container.
