    Prepare the Zucchini

    Slice the zucchini into thin rounds. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the zucchini, season with salt and pepper, and sauté until tender, about 5-7 minutes. Set aside.

    Make the Saffron Hummus

    In a blender or food processor, combine the chickpeas, tahini, lemon juice, saffron, and remaining olive oil. Blend until smooth. If too thick, add a little water to reach desired consistency. Season with salt and pepper to taste.

    Sear the Branzino

    Heat a non-stick skillet over medium-high heat. Season the branzino fillets with salt and pepper. Add a tablespoon of olive oil to the skillet. Once hot, place the fillets skin-side down and sear for about 4-5 minutes until the skin is crispy. Flip and cook for another 2-3 minutes until cooked through.

    Plate the Dish

    On a plate, spread a generous amount of saffron hummus. Place the sautéed zucchini beside it and top with the seared branzino. Garnish with smoked almonds for added crunch.
