    Prepare the Carrots

    Preheat your oven to 425°F (220°C). Peel the carrots and cut them into equal-sized sticks.

    Season the Carrots

    In a bowl, toss the carrot sticks with olive oil, salt, and black pepper until well coated.

    Char the Carrots

    Spread the carrots on a baking sheet in a single layer and roast in the oven for about 25-30 minutes, turning halfway, until they are charred and tender.

    Prepare the Whipped Feta

    In a food processor, combine feta cheese, cream cheese, and lemon juice. Blend until smooth and creamy.

    In a skillet over medium heat, toast the cashews for a few minutes until golden. Stir in cayenne pepper, cumin, and paprika, and cook for another minute.
