Taco and Enchilada Ingredients

Method

Preparation Instructions

  1. 1

    Prepare the Taco Filling

In a skillet, heat the olive oil over medium heat. Add chopped onion and sauté until translucent. Add ground beef and cook until browned. Drain excess fat. Stir in taco seasoning, salt, and pepper. Cook for an additional 2-3 minutes.

  2. 2

    Prepare the Enchiladas

Preheat your oven to 350°F (175°C). In a separate bowl, mix the shredded cheese with half of the enchilada sauce. Take a corn tortilla, fill it with the cheese mixture, roll it up, and place it seam-side down in a greased baking dish. Repeat for all tortillas.

  3. 3

    Top with Sauce and Cheese

Pour the remaining enchilada sauce over the rolled tortillas in the baking dish. Sprinkle any remaining cheese on top.

  4. 4

    Bake

Cover the baking dish with foil and bake in the preheated oven for 15 minutes. Remove foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

  5. 5

    Assemble the Plate

To serve, heat the corn tortillas in a dry skillet until warm. Fill one tortilla with the prepared taco filling and top with lettuce, diced tomatoes, and sour cream. Serve alongside the cheese enchiladas.
