1. Sear the Pork
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced pork shoulder and sear until browned on all sides, about 5-7 minutes. Remove the pork and set aside.
2. Sauté Vegetables
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
3. Combine Ingredients
Return the seared pork to the pot. Stir in the red chile powder, green chile, cumin, salt, and black pepper. Mix well to coat the pork with the spices.
4. Add Broth and Simmer
Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the pork is tender.
5. Prepare Tortillas
While the pork is simmering, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side.
6. Serve
Once the pork is tender, serve it hot with the warm flour tortillas on the side. You can serve with additional red or green chile sauce if desired.
