Sopaipilla Preparation

    Make the Dough

    In a large bowl, mix together the flour, baking powder, and salt. Cut in the shortening or lard until the mixture resembles coarse crumbs. Gradually add warm water, mixing until a soft dough forms. Knead the dough for about 5 minutes until smooth.

    Rest the Dough

    Cover the dough with a clean cloth and let it rest for about 30 minutes.

    Roll Out the Dough

    After resting, divide the dough into small balls (about golf ball size). Roll each ball out on a floured surface until they are about 1/4 inch thick.

    Fry the Sopaipillas

    In a deep skillet or pot, heat vegetable oil over medium heat. Fry each rolled-out dough piece until golden brown, about 2-3 minutes on each side. Drain on paper towels.

    Assemble the Plates

    Serve the sopaipillas warm, topped with refried beans. Optionally, add shredded cheese, sour cream, and salsa on top.
