Preparation Steps

    Prepare the Enchiladas

    Preheat your oven to 350°F (175°C). In a skillet over medium heat, warm the enchilada sauce. Dip each corn tortilla in the sauce, then fill with a generous amount of shredded cheese. Roll the tortillas tightly and place them seam-side down in a baking dish.

    Add More Sauce and Cheese

    Once all the enchiladas are in the baking dish, pour any remaining enchilada sauce over the top. Sprinkle additional shredded cheese on top to your liking.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.

    Prepare the Beans and Rice

    While the enchiladas are baking, heat the refried beans in a small saucepan over medium heat until warmed through. Prepare the cooked white rice according to package instructions if not already done.

    Serve

    Once the enchiladas are done, remove them from the oven. Serve on a plate with a side of refried beans and rice. Garnish with chopped cilantro and add sour cream if desired.
