Method
Preparation
- 1
Prepare the Filling
In a bowl, combine cheddar cheese, monterey jack cheese, and cream cheese. Mix until well combined.
- 2
Prepare the Tortillas
In a skillet, heat the corn tortillas until they are pliable. You can lightly fry them in oil for about 30 seconds per side, or warm them in a microwave.
- 3
Roll the Enchiladas
Take one tortilla, place a portion of the cheese filling in the center, and roll it up tightly. Repeat with the remaining tortillas and filling.
- 4
Assemble the Dish
Place the rolled enchiladas in a baking dish. Pour your favorite chile sauce over the top, ensuring all enchiladas are well covered.
- 5
Bake
Preheat the oven to 350°F (175°C) and bake the enchiladas for 20 minutes, or until the cheese is melted and bubbly.
