Prepare the Enchiladas
Preheat the oven to 350°F (175°C). In a separate pan, heat the refried beans and set aside. Fill each corn tortilla with shredded cheese and a spoonful of refried beans, then roll them up tightly. Place them in a greased baking dish.

Prepare the Chile Con Carne
In a skillet, cook the ground beef over medium heat until browned. Add taco seasoning and 1/2 cup of the Hatch Valley green chile. Stir well and simmer for 5 minutes.

Assemble the Plate
Pour the chile con carne over the enchiladas, then sprinkle additional cheese on top. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.

Heat the Tamales
If using frozen tamales, steam them according to package instructions. If homemade, heat them in a steamer until warm.

Serve
To serve, place the enchiladas on a plate, add the tamales on the side, and top with a dollop of sour cream, diced tomatoes, sliced avocado, shredded lettuce, and additional salsa or chile sauce.
