1. Prepare the Potatoes
Peel the potatoes and cut them into thin strips, about 1/4 inch thick. Rinse in cold water and pat dry with a towel.
2. Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
3. Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry for about 5-7 minutes, or until they are golden brown and crispy.
4. Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately season with salt and paprika.
5. Serve
Serve the fries hot with ketchup on the side for dipping.
