Prepare the Dough
In a mixing bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. In a large bowl, combine flour and salt. Add the yeast mixture and melted butter. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzel Bites
Preheat your oven to 425°F (220°C). Once risen, punch down the dough and divide it into small pieces, rolling each into a small rope and then twisting into a pretzel shape. Cut into bite-sized pieces.

Boil the Pretzel Bites
In a large pot, bring water to a boil and add 1/2 cup baking soda. Carefully drop the pretzel bites into the boiling water for about 30 seconds, then remove with a slotted spoon.

Bake the Pretzel Bites
Place the boiled pretzel bites on a baking sheet lined with parchment paper. Bake for about 12-15 minutes until golden brown. Remove from oven and let cool slightly before serving.
