1. Prepare the Dough
In a large bowl, combine all-purpose flour and salt. Make a well in the center, and add the egg and water. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
2. Make the Filling
Peel and boil the potatoes until tender. In a skillet, melt butter and sauté the chopped onion until golden. Mash the potatoes and mix with sautéed onions, cheddar cheese, salt, and pepper. Allow the filling to cool.
3. Assemble the Pierogis
Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles using a round cutter. Place about a tablespoon of filling in the center of each circle. Fold the dough over and pinch the edges to seal.
4. Cook the Pierogis
Bring a large pot of salted water to a boil. Drop the pierogis in batches and cook until they float to the top, about 3-5 minutes. Remove with a slotted spoon and drain.
5. Serve
Serve hot, optionally topped with sautéed onions, sour cream, or fresh herbs.
