In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

2. Prepare the Coating

In a separate bowl, mix together the all-purpose flour and cornstarch. Set aside.

3. Bread the Chicken

Remove the chicken from the marinade and let any excess liquid drip off. Dip each piece into the flour mixture, ensuring it is fully coated. Place the breaded chicken on a wire rack and let it rest for about 15 minutes.

4. Fry the Chicken

In a large pot or deep skillet, heat the oil over medium-high heat until it reaches 350°F (175°C). Carefully place the breaded chicken into the hot oil, frying in batches if necessary, for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

5. Prepare the Sliders

In a small bowl, mix mayonnaise and hot sauce together to create a spicy mayo. Slice the slider buns in half and spread the spicy mayo on each half. Place a piece of fried chicken on the bottom half, add pickles, and top with the other half of the bun.
