Cheese Curd Preparation

    Heat the Milk

    In a large pot, heat the whole milk over medium heat until it reaches 190°F (88°C), stirring occasionally to prevent scorching.

    Add Vinegar

    Remove the pot from heat and stir in the white vinegar. Let it sit for 10 minutes to allow the curds to form.

    Add Rennet

    Dissolve rennet in a small amount of cool, non-chlorinated water. Stir it into the milk mixture gently and let it sit undisturbed for another 5 minutes.

    Cut the Curds

    Use a long knife to cut the curds into 1-inch cubes. Let them sit for another 5 minutes.

    Heat the Curds

    Gently heat the curds over low heat, stirring occasionally, until they reach 105°F (40°C). This will help them firm up.

    Drain the Curds

    Line a colander with cheesecloth and pour the curds into it. Allow the whey to drain for about 20 minutes.

    Add Salt

    Once drained, sprinkle the curds with salt and mix gently to combine.

    Chill and Serve

    Transfer the cheese curds to a container and refrigerate until ready to serve. They can be enjoyed fresh or used in various recipes.
