    Prepare the Chicken

    Shred the cooked BBQ chicken into small pieces and set aside.

    Char the Onion

    Slice the onion into thin rings. In a pan over medium-high heat, char the onion until it’s slightly browned and soft, about 5 minutes. Remove from heat.

    Chop the Cilantro

    Finely chop the cilantro and set aside for garnish.

Assembly

    Mix the Sauces

    In a bowl, combine the tomato sauce and cowboy sauce. Stir well until fully mixed.

    Layer the Ingredients

    In a baking dish, spread a thin layer of the sauce mixture on the bottom. Then, layer the shredded BBQ chicken evenly over the sauce.

    Add Cheese and Onions

    Sprinkle half of the house-blend cheese over the BBQ chicken, then add the charred onion slices on top. Finish by adding the remaining cheese.

Cooking

    Bake the Yardbird

    Preheat your oven to 375°F (190°C). Bake the assembled dish in the oven for about 20-25 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro before serving.
