Preparing the Fries
Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to make fries.
Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain and pat them dry with paper towels.
Heat the Oil
In a heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Season the Fries
While still hot, sprinkle the fries with salt to taste.
Tossing and Serving
Add Truffle Oil
In a large mixing bowl, drizzle the hot fries with truffle oil. Toss gently until the fries are evenly coated.
Add Parmesan
Sprinkle the shredded Parmesan Reggiano over the fries while tossing, ensuring the cheese adheres to the fries.
Serve
Transfer the truffle fries to a serving platter and serve immediately while hot.
