Prepare the Onions

Peel the onions and slice them thinly into half-moons. You should have about 3 cups of sliced onions.

Heat the Pan

In a large skillet, add the olive oil and heat it over medium heat until shimmering but not smoking.

Cook the Onions

Add the sliced onions to the skillet. Sprinkle with salt and sugar. Stir to coat the onions in the oil.

Caramelize the Onions

Reduce the heat to low and cook the onions, stirring occasionally, for about 30-40 minutes. The onions should turn a deep golden brown and become very soft.

Add Fresh Thyme

When the onions are caramelized, add the fresh thyme and stir well to combine. Cook for an additional 2-3 minutes to allow the flavors to meld.

Serve

Remove the skillet from heat. Serve the caramelized onions warm, or let them cool and store in an airtight container in the refrigerator for up to a week.
