Steak Preparation

    Season the Steaks

    Sprinkle both the tenderloin and ribeye steaks with salt and black pepper on both sides.

    Cook the Steaks

    Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned steaks and cook for about 4-5 minutes per side for medium-rare, or until desired doneness.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing thinly against the grain.

Shiitake Mayo Preparation

    Sauté Shiitake Mushrooms

    In the same skillet, add shiitake mushrooms and sauté until softened, about 3-4 minutes. Remove from heat and let cool slightly.

    Make the Mayo

    In a blender or food processor, combine the sautéed shiitake mushrooms, mayonnaise, minced garlic, lemon juice, and salt. Blend until smooth and creamy.

Sandwich Assembly

    Prepare the Bread

    Slice the baguette or ciabatta bread in half lengthwise and toast lightly if desired.

    Assemble the Sandwich

    Spread a generous amount of shiitake mayo on both halves of the bread. Layer with sliced steak, fontina cheese, and arugula or mixed greens.

    Serve

    Close the sandwich, slice in half if desired, and serve immediately.
