    Prepare the Vegetables

    Peel and slice the red onion into thin rings. Clean the mushrooms with a damp cloth and slice them into quarters.

    Cook the Sausage

    In a large skillet over medium heat, add the spicy Italian sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and fully cooked. Transfer the cooked sausage to a plate and set aside.

    Sauté the Vegetables

    In the same skillet, add the sliced red onion. Sauté for 2-3 minutes until they begin to soften. Then, add the sliced mushrooms and continue to sauté for an additional 5 minutes until the mushrooms are tender.

    Return the cooked spicy sausage to the skillet with the sautéed vegetables. Pour in the tomato sauce and stir everything together until well combined.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 10-15 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.
