Prepare Mixed Greens
In a large bowl, add 4 cups of mixed greens. Make sure to choose a mix that includes a variety of textures and flavors, such as spinach, arugula, and romaine.

Add Vegetables
Halve the cherry tomatoes and add them to the bowl. Peel and slice the cucumber into thin rounds, then add to the salad. Slice the red onion thinly and add a small handful (about 1/4 cup) to the salad. Lastly, peel and julienne the carrot, adding it to the mix.

Mix Dressing Ingredients
In a small bowl or jar, combine 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of Dijon mustard, and 1 teaspoon of honey. Season with salt and black pepper to taste.

Whisk or Shake
Whisk the ingredients together until well combined, or if using a jar, seal and shake vigorously until emulsified.
