Pasta Preparation

    Make the Dough

    In a large bowl, mix the flour and salt. Make a well in the center and add the eggs. With a fork, gradually incorporate the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll and Cut the Pasta

    After resting, divide the dough into four pieces. Roll each piece into thin sheets using a pasta machine or a rolling pin. Cut into linguini strips.

Shrimp and Vegetables Preparation

    Blister the Tomatoes

    In a skillet over medium-high heat, add a drizzle of olive oil. Add the cherry tomatoes and cook until they blister and burst, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add the sliced red onion and asparagus. Sauté for about 5 minutes until they are tender but still crisp.

    Cook the Shrimp

    Add the shrimp to the skillet with the vegetables. Sauté until the shrimp are pink and opaque, about 3-4 minutes.

Sauce Preparation

    Prepare the Sauce

    In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Pour in white wine and bring to a simmer, cooking for 2-3 minutes to reduce slightly.

    Finish the Sauce

    Add butter to the skillet and stir until melted and incorporated. Season with salt and pepper to taste.

Combine and Serve

    Cook the Pasta

    In a large pot of boiling salted water, cook the linguini for 2-3 minutes until al dente. Reserve ½ cup of pasta water, then drain the pasta.

    Combine Everything

    Add the cooked linguini to the skillet with the sauce, shrimp, and vegetables. Toss to combine, adding reserved pasta water as needed to loosen the sauce.

    Garnish and Serve

    Stir in fresh herbs and serve immediately, garnished with additional herbs if desired.
