Method

Hummus

  1. 1

    Prepare Roasted Garlic

Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for 30-35 minutes until soft. Allow to cool.

  2. 2

    Blend Hummus Ingredients

In a food processor, combine the canned chickpeas, tahini, roasted garlic (peeled), lemon juice, olive oil, water, salt, and cumin. Blend until smooth, adding more water if necessary to reach desired consistency.

Mint Labneh

  1. 3

    Prepare Labneh

In a bowl, mix the plain yogurt with salt and finely chopped fresh mint leaves. Stir until well incorporated. Drizzle olive oil on top before serving.

Flat Bread

  1. 4

    Mix Dough

In a large bowl, combine all-purpose flour, baking powder, salt, and olive oil. Gradually add water until a dough forms.

  2. 5

    Knead and Roll

Knead the dough on a floured surface for about 5 minutes until smooth. Divide into 8 equal pieces and roll each into a flat circle.

  3. 6

    Cook Flatbread

Heat a skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side until lightly browned and cooked through.

Assembly

  1. 7

    Assemble Mezze Platter

Serve the hummus, mint labneh, assorted olives, cherry tomatoes, cucumber slices, and flatbread on a large platter. Sprinkle with sumac for garnish.
