Method
Hot Honey Chicken
- 1
Marinate the Chicken
In a bowl, combine the buttermilk, hot sauce, salt, and black pepper. Add the chicken thighs and ensure they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
- 2
Prepare the Coating
In a separate bowl, mix the all-purpose flour and cornstarch together. Set aside.
- 3
Fry the Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, coating evenly. Fry the chicken in batches for about 7-8 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.
- 4
Make the Hot Honey
In a small saucepan, combine honey and red pepper flakes. Heat over low heat until warmed through. Drizzle the hot honey over the fried chicken before serving.
Citrus Slaw
- 5
Prepare the Slaw
In a large bowl, shred the green cabbage and grate the carrot. In a small bowl, whisk together orange juice, lime juice, honey, and salt. Pour the dressing over the cabbage and carrot, tossing to combine. Let it sit for 10-15 minutes to allow flavors to meld.
Spicy Mayo
- 6
Make the Spicy Mayo
In a bowl, mix together mayonnaise and hot sauce. Adjust the amount of hot sauce to taste. Set aside.
Assembly
- 7
Cook the Bacon
In a skillet, cook the bacon slices until crispy. Drain on paper towels.
- 8
Assemble the Sandwiches
Slice the fresh buns in half. Spread a generous amount of spicy mayo on the bottom half, add a piece of fried chicken, top with crispy bacon, and a heaping spoonful of citrus slaw. Place the top half of the bun on and serve immediately.
