Method

Roasted Garlic & Fennel Cream Sauce

    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the garlic head to expose the cloves, drizzle with olive oil, and wrap in foil. Roast for about 30-35 minutes until soft and caramelized.

    Prepare the Fennel

    While the garlic is roasting, slice the fennel bulb thinly. Heat a skillet over medium heat, add a tablespoon of olive oil, and sauté the fennel for about 5-7 minutes until softened.

    Make the Sauce

    Once the garlic is roasted, squeeze the cloves out into a blender. Add the sautéed fennel, heavy cream, salt, and black pepper. Blend until smooth and creamy. Set aside.

Mushrooms

    Prepare the Mushrooms

    Clean the mushrooms with a damp cloth and slice them as needed. Heat a skillet over medium-high heat, add a tablespoon of olive oil, and sauté the forest mushrooms for about 5-7 minutes until golden brown. Add the field mushrooms and cook for an additional 3-5 minutes.

Combine & Serve

    Assemble the Dish

    In a large mixing bowl, combine the sautéed mushrooms with the roasted garlic & fennel cream sauce. Stir gently to incorporate the flavors.

    Add the Cheese

    Sprinkle the house-blend cheese over the mushroom and sauce mixture. Mix gently to combine.

    Serve

    Transfer the mixture to a serving dish. Drizzle with chili oil, sprinkle crispy fried garlic, and chili flakes on top for added crunch and flavor. Enjoy!
