Method

Brining the Chicken Wings

    Prepare the Brine

    In a large mixing bowl, combine water, salt, brown sugar, crushed garlic, black peppercorns, and bay leaves. Stir until the salt and sugar are fully dissolved.

    Brine the Wings

    Add the chicken wings to the brine mixture, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or overnight for best results.

Frying the Wings

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Wings

    Remove the wings from the brine, pat them dry with paper towels, and carefully place them in the hot oil. Fry in batches until golden brown and crispy, about 10-12 minutes per batch.

    Drain the Wings

    Using a slotted spoon, remove the wings from the oil and place them on a wire rack or paper towels to drain excess oil.

Preparing the Sauces
