Preparation of Vegetables

Prepare the Tomatoes
Chop the tomatoes into bite-sized pieces and place them in a mixing bowl. Set aside.

Prepare the Basil
Wash and pat dry the fresh basil leaves. Tear some leaves into small pieces for garnish.
Making the Walnut Pesto

Blend the Pesto Ingredients
In a food processor, combine walnuts, fresh basil, garlic cloves, parmesan cheese, salt, and pepper. Pulse until finely chopped. While the processor is running, slowly drizzle in the olive oil until everything is well combined and smooth.
Assembling the Dish

Toast the Sourdough
Slice the sourdough bread into thick pieces and toast them until golden brown.

Plate the Ingredients
On a serving platter, layer the chopped tomatoes and charred asparagus. Spoon generous amounts of walnut pesto over the top.

Add the Burrata
Carefully place the burrata cheese on top of the vegetables. Drizzle with a little extra olive oil if desired.

Garnish and Serve
Garnish with torn basil leaves and serve with the toasted sourdough on the side.
