Soak Rice Noodles
In a large bowl, soak the rice noodles in warm water for 30 minutes, or until they are soft. Drain and set aside.

Prepare Sauce
In a small bowl, mix together the fish sauce, tamarind paste, sugar, chili powder, and lime juice. Set aside.
Cooking

Cook Chicken and Shrimp
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast and cook until browned, about 3-4 minutes. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from the skillet and set aside.

Scramble Eggs
In the same skillet, add another tablespoon of oil. Crack the eggs into the skillet and scramble until fully cooked, about 2 minutes. Remove and set aside with the chicken and shrimp.

Stir-Fry Vegetables
Add the remaining tablespoon of oil to the skillet. Add the chopped green onions, sliced red bell pepper, and bean sprouts. Stir-fry for 2-3 minutes until the vegetables are tender.

Combine Noodles and Sauce
Add the soaked rice noodles and the sauce mixture to the skillet. Toss everything together until the noodles are well coated and heated through.

Add Protein and Serve
Return the cooked chicken, shrimp, and scrambled eggs to the skillet. Toss until combined. Serve hot, garnished with crushed peanuts, fresh cilantro, and lime wedges.
