Method

Marinating the Chicken

    Prepare the Marinade

    In a bowl, combine soy sauce, lime juice, minced garlic, grated ginger, brown sugar, and sesame oil. Whisk until the sugar dissolves.

    Marinate the Chicken

    Cut the chicken breast into bite-sized pieces and add to the marinade. Mix well to coat the chicken and let it marinate for at least 30 minutes in the refrigerator.

Making the Peanut Sauce

    Combine Ingredients

    In a saucepan over medium heat, add peanut butter, coconut milk, soy sauce, lime juice, brown sugar, chili paste, and water. Stir continuously until smooth and heated through.

    Adjust Consistency

    If the sauce is too thick, add a little more water until desired consistency is reached. Remove from heat and let it cool slightly.

Grilling the Chicken

    Prepare the Grill

    Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

    Skewer the Chicken

    Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

    Grill the Skewers

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serving

    Plate the Chicken

    Remove the skewers from the grill and place them on a serving platter.

    Serve with Peanut Sauce

    Drizzle the peanut sauce over the chicken skewers and garnish with chopped cilantro and lime wedges on the side.
